Its moisture content is 63.5%, with a 2% plus/minus variance.The raw materials are deboned, blended then chilled to 28-36 degrees Fahrenheit, boxed, palletized and transfered to a 40 degree Fahrenheit blast cell.  Once the product is removed from the blast cell, the product is stored at -10 degrees until shipment.
