Inside, topside, outside, silverside, knuckle, rump, striploin, tenderloin, cube roll, chuck, blade, shortloin, O. P. Ribs, butts, brisket, ribs, fore quarter, hind quarter, shin/shank, fat, manufacture meat, trimmings.
Offal available:
Livers, hearts, kidneys, tongues, cheeks, tails, skirt, tendons, aorta, spleens, lungs, lips, trachea, tails, membrane, ligamentum nuchae(paddywack), tripe(whole, pieces, omasum, honeycomb), small& large intestines(tube& split open). Other offal is available upon request.
