Tilapia

Description: Tilapia (various species) are fresh water fish which are native to Africa and in recent years have been farm-raised in tropical and temperate climates throughout the world. It is the fastest growing aquaculture product. The pinkish or off-white flesh turns white upon cooking and is moderately firm with tender flakes and a very mild, slightly sweet flavor. The flavor is made more interesting by chefs through the addition of herbs, garlic, lime, etc.
