PalmOlein is one of the most popular frying oils and also finds extensiveapplication in manufacture of margarine, shortening, ghee, condensedmilk, soaps etc. It is the liquid fraction obtained by fractionation ofpalm oil after crystallization at controlled temperatures. The processcommences with the milling of fresh fruit bunches and includes refiningactivities such as degumming, bleaching, distillation anddeodorization.
