The fatty oil from seeds is antispasmodic and nerve stimulant. The leaves and stalks of celery plant are used as salad and in the preparation of soups etc. The fatty oil from seeds is antispasmodic and nerve stimulant. The roots possess diuretic property. The seeds can be used in picking fish and salad dressings and other dishes where celery flavour is desired.

  Celery seed oil finds major uses in flavouring industry for processed foods such as soups, sauces, pickles, meat and vegetable juice. The oil from seeds is used to treat asthma, flatulence and bronchitis.

The oleoresin extracted from celery contains 12-16%volatile oil. Celery seeds are employed for flavouring soups, salads, sauce, meat, dishes fish and eggs and pickles.

       Celery is the dried fruit of the herb Apium graveolens locally known as Karmauli and is extensively grown in the Punjab and its surrounding areas for seeds and leaf oil that contains about 2-3% oil. Its commercial cultivation in India has been taken up during the recent years by progressive farmers of  Punjab, U.P, and Haryana. This oil finds extensive use for flavouring food products. India exports substantial quantities of the seed to U.S.A ,U.K, USSR and Japan for the extraction of oil and oleoresin. The celery plants a hardy biennial, occasionally, annual, widely cultivated for its fleshy leafstalk. In India, it is occurring wild and also is cultivated in the foothills of northwestern Himalaya and outlying hills of Punjab, Himachal Pradesh and Uttar Pradesh. Celery volatile oil show primarily the major compound such as D-limonene (60-70%) and Bita-selinene (10-20%)
