Bixin

Bixin color is extracted from the Anatto seeds. Bixa orellana, the crude pigment is the mixed isomer of carotenoid carboxlyic acid. It appears as deep purple to crimson coloured, free flowing crystalline powder. It is used to colour margarine, ice creams, cheese and butter products, beverages, sauces, meat, confectionery and bakery products.
