planetary mixer

I am a pastry -cook and I want to know  if you offer   convection ovens with   8-10  tray  with proofer  for 16-20  tray and  what kind are they. Do you have also a small dough sheeters . If I order a mixer is it possible
to add to it in addition 1 bowl , 1 fine wire whisk, 1spatula beater, 1 hook and 1 heavy wire whisk. My last question is are all bowls made of stainless steel and do the mixers   have  speed.
