Liquid nitrogen cryopreservation technology of seafood is a new kind of food cryotechnology. The standard temperature of liquid nitrogen is -195.8℃ which is the most environmental protection, most efficient and most economical cooling medium in food industry. When seafood contact with liquid nitrogen, the temperature difference will exceed 200℃ which can rapid freeze the seafood in 5 minutes. Rapid freezing can form the least ice particles of seafood, put an end to the loss of moisture, and inhibit the destruction of bacteria and other microorganisms to food, so the food hardly discoloration and rancidity and maintain the original color and flavor and nutrients of the seafood. Long-term freezing can ensure the best taste.
The value of aquatic products depends primarily on its freshness. However, the moisture of aquatic products is quite high, generally 70%-80%; there is little matrix protein in muscle protein, muscle tissue is fragile, autolysis is quick and easily hurt and affected by microbial infection, so it is easy to corrupt. Seafood storage shelf life is mainly influenced by storage temperature and temperature fluctuations. While the storage temperature of intelligent cryoseafood series can reach -190℃ stably which can effectively extend the shelf life of seafood storage. When the shelf life is extended, it will miss the peak season which can earn higher yields.
